Kacchi Biryani is not assembled. It is surrendered to patience. At BKC, it begins the only way tradition allows - raw lamb, marinated slowly with yoghurt, ginger, garlic, nutmeg, mace, green chillies, and deeply fried onions. Nothing is pre-cooked. Nothing is rushed.
The marinated meat is layered at the base of the handi, crowned gently with fragrant basmati rice. Ghee is poured. Saffron is steeped. The pot is sealed tight and placed on low fire, where steam, pressure, and time take over. The lamb cooks in its own juices, the rice absorbs flavour from below, and everything meets in perfect balance - quietly, without interference.

At BKC, every pot begins the traditional Lucknowi way: the finest long-grain basmati in the UK, hand-selected for its bloom; a drop of authentic ittar from Lucknow, the same edible perfume used in Awadhi kitchens for generations; fresh produce and hand-pounded masalas; and a slow dum that refuses shortcuts. The making of biryani here isn’t a recipe - it’s a ritual, and every layer in that handi tells the story of where we come from.
