Each month, a new hero biryani takes centre stage, inviting diners to explore a distinct chapter of India’s slow-cooked rice heritage.
At BKC Biryani Kebab Chai London, we proudly serve our signature Awadhi Dum Pukht Biryani daily—saffron-infused, gently layered, and cooked with patience. Alongside it, Biryani Diaries unveils a new flavour of the month every weekend, opening a Pandora’s box of regional and global rice traditions that honour time, technique, and depth of flavour.
Hyderabadi Biryani – Chicken on the Bone
February’s Biryani Diaries chapter celebrates the iconic Hyderabadi Biryani—a bold, spice-forward classic born in the royal kitchens of the Nizams.
Prepared using the traditional dum technique, fragrant basmati rice and delicately marinated chicken on the bone are layered and slow-cooked in a sealed pot. Guided by the BKC chef’s mastery of time, spice, and balance, the result is deeply aromatic, unhurried, and true to tradition.
