Biryani Diaries is a monthly culinary series born from our Biryani Bharat Yatra-a journey through the royal kitchens and regional traditions that shaped one of the world’s most celebrated rice dishes. Each month, la new hero biryani takes centre stage, inviting diners to explore a distinct chapter of India’s slow-cooked rice heritage.

At BKC Biryani Kebab Chai London, we proudly serve our signature Awadhi Dum Pukht Biryani daily-saffron-infused, gently layered, and cooked with patience. Alongside it, Biryani Diaries unveils a new flavour of the month every weekend, opening a Pandora’s box of regional and global rice traditions that honour time, technique, and depth of flavour.

MARCH FLAVOUR OF THE MONTH

As part of our Biryani Diaries series, Biryani Kebab Chai will be serving the iconic Kolkata Biryani as a special weekend experience throughout March. Every Friday to Sunday, our kitchens will prepare this beloved classic in limited batches, bringing the delicate flavours and heritage of Kolkata’s biryani tradition to the table.

Made using fragrant basmati rice layered with tender chicken on the bone, golden potatoes,and boiled eggs, the biryani is slow-cooked using the traditional dum technique. Each pot is carefully sealed and patiently cooked to allow the aromas of whole spices, saffron, and ghee
to gently infuse the layers-creating a light, fragrant, and comforting biryani that defines the elegance of Kolkata’s culinary legacy.
