Born from our Biryani Bharat Yatra, Biryani Diaries is a limited series celebrating slow-cooked rice traditions from across the world, reimagined with care in the BKC kitchen. Each chapter is rooted in research, tradition, and time—bringing depth, balance, and soul to the plate.
Hyderabadi Biryani (Chicken on the Bone) Prepared using the traditional dum technique, fragrant basmati rice and delicately marinated chicken on the bone are layered and slow-cooked in a sealed pot, guided by the BKC chef’s mastery of time, spice, and balance. Deeply aromatic, unhurried, and true to tradition.
