We begin in Dhaka, where the famed Kacchi Biryani echoes our own Awadhi soul.Cookedentirely on dum, with raw marinated lamb nestled beneath fragrant rice, it shares a spiritwith Lucknow – but starts where we finish. Chef Deepankar’s years in Dhaka bring this dish tolife with depth and memory, bridging borders with flavour. Rich with ghee, potatoes, andsoft saffron, Kacchi Biryani is layered not just in taste, but in tradition. At BKC, this is ourhomage to a biryani born across the border – yet bound to us by heart.
